How to Store Honey Properly and Why Honey Can Crystallize

Choose a dry place

As general guidance, keep honey in a tightly closed container in a dry cupboard away from direct sunlight and nearby heat. Follow the storage and best-before instructions on your actual pack.

Keep water out

Use a clean, dry spoon. Do not dip a wet utensil into the container or pour unused honey back from a bowl. Honey can absorb moisture, and too much moisture can create conditions for fermentation.

Understand the crystals

Honey contains sugars including glucose. Glucose can form crystals, changing a liquid texture into a grainy or firmer one. Composition, temperature and processing affect the rate, so two jars need not change at the same time.

Texture is not a purity test

Crystallization is a normal physical change that can occur in honey. It does not, by itself, show that a jar is pure, raw or spoiled. Colour and thickness also cannot establish a source or certification.

Using a firmer jar

Crystallized honey can be convenient as a spread. If a recipe needs liquid honey, follow the pack instructions for handling it. Do not assume a container is suitable for heating. Do not use a product with signs of spoilage, and ask the seller if uncertain.
