Moringa Powder vs Fresh Moringa Leaves: What's the Difference?

By Thenvanam Editorial ·

In short

Moringa powder is the same leaves with the water removed: fresh leaves are about three-quarters water, so a spoonful of powder stands in for a much larger handful of leaves. Use fresh leaves for poriyal, keerai and soups where texture matters; use powder to stir into batter, rasam, chutney or a smoothie.

Same plant, different form

Murungai keerai — fresh moringa leaves — and moringa leaf powder both come from Moringa oleifera. Powder is simply the leaves dried at low heat and ground. Nothing is added, and nothing but water is taken away.

Why powder is more concentrated

The Indian Food Composition Tables list fresh moringa leaves at roughly 75% water. Drying removes most of that, so gram for gram, powder holds far more leaf than fresh leaves do. That is why recipes use powder by the teaspoon and fresh leaves by the cup.

In the kitchen

Fresh leaves bring texture: they wilt into a poriyal, a keerai kootu or an adai batter, and they are the traditional form. Powder disappears into whatever it is stirred into, so it suits dosai and idli batter, rasam, soups, chutney podi and smoothies.

Add powder towards the end of cooking or after, and start small — about a teaspoon per serving — as its green, slightly bitter taste is concentrated.

Convenience and storage

Fresh leaves need stripping from the stalks and keep only a day or two in the fridge. Powder keeps for months if stored airtight, dry and away from light, and is ready to use with a spoon — which is why many households keep both.

Which to choose

If you can get fresh murungai keerai and want a leafy dish, use fresh. If you want moringa in everyday food without the stripping and cleaning, or you cannot buy it fresh, use powder. Thenvanam Moringa Leaf Powder is dried leaves only, in a 100 g pack.

Key takeaways

  • Powder is moringa leaves with the water removed.
  • Fresh leaves for leafy dishes; powder to stir into batters, rasam and drinks.
  • Start with about a teaspoon of powder per serving.

Frequently asked questions

How much moringa powder equals fresh leaves?

Because fresh leaves are about three-quarters water, a little powder replaces a lot of leaves. In practice, a teaspoon of powder is used where a recipe would take a handful of fresh leaves, adjusted to taste.

Can I use moringa powder in poriyal?

You can stir a little in at the end, but poriyal is traditionally made with fresh leaves for their texture.

Should I cook moringa powder?

Add it towards the end of cooking or after taking the dish off the heat, so its colour and flavour stay fresh.
