In short
Steep 4–5 dried sangu poo flowers in a cup of hot water for 3–5 minutes, strain, stir in sugar or honey to taste while it is warm, and let it cool. Pour it over a glass full of ice, then add lemon juice last — the blue shifts toward purple or pink as it goes in.

Method
Steep the flowers
Put 4–5 dried flowers in a cup and pour over hot water. Steep for 3–5 minutes — towards 5 minutes for a deeper blue that stands up to the ice.
Strain and sweeten
Strain out the flowers. Stir in sugar, jaggery syrup or honey to taste while the infusion is still warm, so it dissolves fully.
Cool the infusion
Let the infusion cool to room temperature, then chill it if you have time. Pouring hot infusion straight onto ice melts most of it and leaves a pale, watery drink.
Pour over ice
Fill a tall glass with ice and pour the blue infusion over it.
Add the lemon last
Squeeze in the lemon juice just before drinking and stir. The colour shifts from blue toward purple or pink as the lemon mixes through. Adjust the sweetness and serve straight away.
Why the lemon goes in last
The colour change is the point of this drink, and it only happens once. Sweeten and chill the blue infusion first, pour it over the ice, and add the lemon at the table so you see it turn. Lemon added during steeping gives you a purple drink with nothing left to happen.
More lemon pushes the colour further toward pink; a few drops keeps it closer to violet. The change comes from the acid alone, so lime works the same way.
Making a jug
Keep the same proportion as the product guidance — 4–5 flowers for each cup of hot water — and scale up. Four cups of water takes about 16–20 flowers.
- Steep, strain and sweeten the whole batch while warm.
- Cool it, then chill it in the jug without the lemon.
- Serve over ice and let each person add lemon to their own glass.
- Make it on the day you plan to drink it.
Getting a deeper blue
A pale cooler usually means cooler water, a shorter steep or a lot of melted ice. Use water that is properly hot, steep toward the full 5 minutes and chill the infusion before it meets the ice. Honey can dull the colour slightly compared with sugar or a clear syrup.
Sangu Poo is described for preparing a herbal infusion, and this cooler is a culinary preparation that follows the steeping guidance on the product page — 4–5 flowers in a cup of hot water for 3–5 minutes. If you are pregnant, breastfeeding, taking medication or managing a health condition, ask a qualified professional before adding a new ingredient to your diet.

Frequently asked questions
Can I cold-brew the flowers instead?
The product guidance describes steeping the flowers in hot water for 3–5 minutes, so this recipe steeps hot and chills afterwards. That also gives a stronger colour than cold water in the same time.
Why did my drink turn purple before I added lemon?
Something acidic reached it earlier — a slice of lemon in the glass, a flavoured syrup or a glass with lemon left in it. Keep everything acidic out until the end.
How much lemon should I add?
Start with the juice of half a lemon for one glass and taste. A few drops shows the colour change; more takes it further toward pink and makes the drink sharper.
Can I use honey?
Yes. Sweeten to taste with honey, sugar or jaggery syrup. Stir it in while the infusion is warm so it dissolves.
How long does it keep?
It is best made and drunk the same day. Keep the unlemoned infusion covered in the fridge until you serve it.
Is this suitable for everyone?
If you are pregnant, breastfeeding, taking medication or managing a health condition, ask a qualified professional before adding a new ingredient to your diet.
